This creamy wild garlic dip with feta cheese can be made in no time, is very tasty and goes well with many dishes! Whether as a dip, spread, with salad or BBQ - simply delicious!

I love spring for so many reasons. One of the best things for me is that the warm temperatures usher in a time when so many good things grow in nature. Wild garlic is probably one of the first plants that is just waiting to be used in delicious recipes. Like this wonderfully creamy wild garlic dip, for example.

What is wild garlic?

Wild garlic grows usually in the forest and can be prepared in a similar way to spinach, but it tastes quite intensely of garlic. It is bright green, very healthy and very versatile.

If you cut the wild garlic directly from the forest or meadow, it is important that it is washed well before you use it. As with all things that grow in nature, there is a possibility that animals have come into contact with the plants or simply soil and dust.

As an alternative, you can use the same amount of fresh spinach and an additional 1-2 pieces of finely minced garlic for this dip.

Wild Garlic Dip with Feta Cheese - Ingredients and Alternatives

Curd or Ricotta Cheese. In Austria and Germany curd (Topfen or Quark) is a very common dairy product. As an alternativ you can use ricotta cheese.

feta cheese. Due to its salty taste, feta cheese makes a flavor-intensive, very tasty dip.

Sour Cream. The sour cream is responsible for making the dip very creamy.

wild garlic. Wild garlic tastes like spinach with garlic. It has an intense green color and grows in the forest. You can also buy it in many supermarkets but it is usually only available in spring.

Alternatively, the wild garlic can be replaced with the same amount of spinach leaves. I also recommend mixing 2 finely chopped garlic cloves into the dip.

Salt, pepper, lemon juice. To season the wild garlic and feta cheese dip.

Honey. The honey ensures a balance between sweet, sour and salty and rounds off the flavors perfectly.

How to make a Wild Garlic Dip with Feta Cheese

Wash the wild garlic (or spinach leaves) well, drain and chop finely.

I crumble the feta with my fingers for this wild garlic dip because I like the larger pieces of feta in it. Alternatively, you can also mix all the ingredients (except the wild garlic) finely in a blender.

Mix the curd (ricotta), sour cream and the crumbled feta cheese in a bowl until well combined. Alternatively, mix in a blender.

Add the chopped wild garlic (or spinach and minced garlic).

Season with salt, pepper and lemon juice.

What should I consider when getting wild garlic from the forest?

If you collect the wild garlic yourself from the forest or meadow, it is very important to wash it well before processing and then pat it dry.

What can I use if I don't have wild garlic?

As an alternative to wild garlic, use the same amount of fresh spinach leaves and an additional 1-2 chopped garlic cloves.

Can I make the wild garlic dip with feta cheese ahead of time?

The dip can be prepared ideally. After a few hours, some liquid may separate from the quark or feta cheese. This is completely normal. Simply stir the dip well before serving.

Store the wild garlic and feta cheese dip in an airtight container in the refrigerator and use within 3 days.

Ingredients

  • 250 g curd or ricotta cheese
  • 80 g feta cheese
  • 120 g sour cream
  • 2 cups wild garlic fresh and washed; alternatively fresh spinach and 1-2 minced garlic gloves
  • ½ tsp salt
  • ¼ tsp black pepper freshly grounded
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup

Instructions

  • Wash the wild garlic (or spinach), drain well and chop finely. Crumble the feta with your fingers.
  • Mix the curd (or ricotta cheese), sour cream and feta well in a bowl. If you want it to be finer, mix it in a blender.
  • Add the chopped wild garlic and stir well. Season with salt, pepper and lemon juice.
  • Store in the refrigerator in a container with a lid until you wanna serve it. Use within 3 days.
