With loaf cakes there is often a risk that they are dry and boring. Not so with this amazing banana bread with blueberries!

This moist banana bread is ideal for the weekend. It's quick to make and goes well with afternoon coffee, brunch or a cozy picnic.

The bananas and butter ensure a soft, moist texture. And then all the blueberries! With 250 grams / 9 ounces I found the ideal amount for me. This means I have a lot of blueberries on my fork and at the same time the delicious banana vanilla flavor is still very present.

How to make the best banana bread recipe

Mix flour, grated nuts, ground oat flakes, baking powder and salt in a bowl.

Beat sugar, butter and eggs in a separate bowl using a hand mixer or food processor until fluffy. Whipping these ingredients together makes the banana bread extra soft and fluffy.

Now fold the dry ingredients and blueberries into the butter and egg mixture. Only stir them in as long as necessary, otherwise there is a risk that the banana cake will become sticky.

After you have poured the dough into a loaf pan, bake it in the preheated oven for about 55 minutes.

Use only very ripe bananas. Means those whose peel already has a lot of brown spots. You don't want the floury, hard bananas, BUT the soft, sweet ones. Why? They are much sweeter than yellow or sill lightly green bananas, they are softer and they have a much better and more intense flavor.

Is there anything I should consider when baking the banana bread?

Mix the ingredients only as long as neccessary. If you mix the batter too long you will release the gluten of the flour which would make the texture firm and sticky. The quicker and "rougher" you'll mix the ingredients, the better.

How long should I bake this banana bread?

The baking time can vary depending on your oven. I recommend to do a toothpick test after 50 minutes in the oven. If the dough still sticks on the toothpick, leave the banana bread in the oven for another 5 minutes. If the surface is already brown enough for your taste, you can place aluminum foil on top of it for the remaining baking time. This way the banana bread with blueberries will continue to bake without the surface becoming too dark.

Can I use frozen blueberries?

Ingredients

  • 2 ripe bananas about 250 g / 9 ounces
  • 60 g oat flakes finely grounded
  • 120 g sugar light brown sugar or granulated sugar
  • 120 g all-purpose flour
  • 50 g grated hazelnuts or grated almonds
  • 100 g butter room temperature
  • 2 medium Eggs preferably organic
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • ¼ tsp salt
  • 250 g blue berries fresh or frozen

  • 60 g icing sugar
  • 15 ml lemon juice or a little bit more

Instructions

  • Preheat the oven to 170°C / 338°F. Prepare a loaf pan (approx. 21x11cm / 9x4 inches): either grease it with butter and dust it with a little flour or line it with baking paper.
  • Mash the bananas in a bowl with a fork. In a second bowl, mix together the oats, flour, grated nuts, baking powder and salt
  • Beat the butter and sugar with a hand mixer for two minutes until fluffy. Add one egg, beat for 30 seconds, add the second egg and beat for another 30 seconds until fluffy. Stir in the mashed bananas and vanilla extract.
  • Pour in the dry ingredients and quickly stir with a spatula to form a dough (only as long as necessary). Fold in the blueberries with a spatula.
  • Pour the dough into the loaf pan and bake for 50-55 minutes. Nothing should stick to a toothpick when you insert it into the dough.
  • Let the banana cake cool in the loaf pan for 15 minutes, then remove from the load pan and let it cool completely on a cake rack.
  • For the glaze, mix icing sugar and lemon juice with a fork in a small bowl. Add a few more drops of lemon juice if you want it to be thinner. Glaze the banana bread.
