Ingredients
220goat flakes
80gcashewsroughly chopped
40gcoconut chips, unsweetened
20gcoconut flouror oat flour or finely mixed oat flakes
80mlcoconut oilmelted
80mlmaple syrup
½tspsalt
¼tspcardamomgrounded; optional
Instructions
Preheat the oven to 160°C / 320°F top/bottom heat. Line a baking tray with baking paper.
Mix the oats, cashews, coconut chips, coconut flour, salt and cardamom (optional) in a large bowl.
Pour the melted coconut oil and maple syrup onto the dry ingredients and stir everything together. Spread the mixture on the baking paper and press it down lightly with your hands or a spatula.
Bake in the preheated oven for 20-25 minutes until the granola is golden. Then turn off the oven and open the oven door for a few seconds so that some of the steam and heat escapes. Close again and let the granola “dry” in the switched off oven for 30 minutes.
Remove the coconut granola from the oven and let it cool completely on the tray. Only break into pieces when cool. This leaves nice, large and chunky pieces. Store the granola in a container with a lid.
