Instructions
Preheat the oven to 170°C / 338°F. Prepare a loaf pan (approx. 21x11cm / 9x4 inches): either grease it with butter and dust it with a little flour or line it with baking paper.
Mash the bananas in a bowl with a fork. In a second bowl, mix together the oats, flour, grated nuts, baking powder and salt
Beat the butter and sugar with a hand mixer for two minutes until fluffy. Add one egg, beat for 30 seconds, add the second egg and beat for another 30 seconds until fluffy. Stir in the mashed bananas and vanilla extract.
Pour in the dry ingredients and quickly stir with a spatula to form a dough (only as long as necessary). Fold in the blueberries with a spatula.
Pour the dough into the loaf pan and bake for 50-55 minutes. Nothing should stick to a toothpick when you insert it into the dough.
Let the banana cake cool in the loaf pan for 15 minutes, then remove from the load pan and let it cool completely on a cake rack.
For the glaze, mix icing sugar and lemon juice with a fork in a small bowl. Add a few more drops of lemon juice if you want it to be thinner. Glaze the banana bread.

Which bananas work best for this recipe?
Use only very ripe bananas. Means those whose peel already has a lot of brown spots. You don't want the floury, hard bananas, BUT the soft, sweet ones. Why? They are much sweeter than yellow or sill lightly green bananas, they are softer and they have a much better and more intense flavor.Is there anything I should consider when baking the banana bread?
Mix the ingredients only as long as neccessary. If you mix the batter too long you will release the gluten of the flour which would make the texture firm and sticky. The quicker and "rougher" you'll mix the ingredients, the better.
How long does the banana bread with blueberries have to be baked?
The baking time can vary depending on your oven. I recommend to do a toothpick test after 50 minutes in the oven. If the dough still sticks on the toothpick, leave the banana bread in the oven for another 5 minutes. If the surface is already brown enough for your taste, you can place aluminum foil on top of it for the remaining baking time. This way the banana bread with blueberries will continue to bake without the surface becoming too dark.
Can I use frozen blueberries?
Yes! If you don't have fresh blueberries at home, you can also use frozen berries and mix them directly into the dough. The baking time will then be extended by a few minutes . .
Which glaze did you put on top of this banana bread?
It's a delicious glaze made out of lemon juice and icing sugar. ist das "Sahnehäubchen" auf dem Bananenbrot. Die Frische und Säure der Zitrone in Kombination mit der Süße des Zuckers passt hervorragend dazu. Sie ist jedoch kein Muss, ABER dennoch sehr empfehlenswert. :)
Can I freeze the banana bread with blueberries?
Yes. You can freeze it very well. To do this, let it cool completely. You can freeze it whole or sliced. Depending on size, remove from freezer 1-4 hours before serving and allow to thaw at room temperature.Spread the glaze onto the banana bread AFTER it has frozen.
