How to Make Healthy Breakfast Muffins
FIRST PART: The Muffin Dough
When developing this recipe for healthy breakfast muffins, I wanted to pack as many healthy ingredients into the batter as possible. It consists of lots of juicy, vitamin-rich fruit, yogurt, oats and other great ingredients. These make the muffins not only incredibly good, but also give them a great texture.
You don't need a mixer to prepare it. All ingredients are simply mixed by hand in a bowl.
SECOND PART: The Nut Streusel
The crunchy streusel made from nuts and oat flakes are my highlight of these delicious muffins. The six ingredients are also simply mixed together in a bowl.

Can I use both fresh and frozen blueberries?
Yes, you can. If you mix frozen blueberries into the batter, you only need to bake the muffins for 2-3 minutes longer.
Can I replace the blueberries with other fruit?
Yes definitely! Instead of blueberries, try e.g. raspberries, cherries or currants! As long as the size and consistency is similar to blueberries, there are no limits to your imagination.
Which nuts can I use for the topping?
Use your favorite nuts for the topping (coarsely chopped). Instead of walnuts, for example, the following also taste very good:
- hazelnuts
- almonds
- pecans
Can I freeze these Streusel Muffins?
Yes! They are ideal to freeze and defrost in pieces. This guarantees a delicious, filling breakfast! To do this, take them out of the freezer 1 hour before you wanna eat them.
These healthy Breakfast Muffins taste best when slightly warm. To do this, either put them in the oven (120°C / 250°F) for 3-5 minutes or place them briefly on a toaster (without muffin paper).
Enjoy pure, with jam, maple syrup or, in my favorite version with butter and honey..

Equipment
- 1 muffin tinfor 12 muffins
- 12 paper muffin cases
Ingredients
Dough
- 1 medium banana ripe - slighly brown on the peel; about 120 g
- 1 medium apple seeds removed, shredded; about 180 g
- 100 g blue berries fresh or frozen
- 80 g butter melted
- 80 g plain yoghurt
- 160 ml milk alternative: your favorite plant based milk
- 120 g maple syrup
- 30 g oat flakes
- 200 g cake spelt flour or all-purpose flour
- 2 medium Eggs room temperature; best case organic
- 1 tsp cinnamon
- 2 tsp baking powder
- ½ tsp salt
Nut Streusel
- 80 g walnuts roughly chopped
- 30 g oat flakes
- 30 g butter melted
- 40 g cake spelt flour or all-purpose flour
- 40 g maple syrup
- ¼ tsp salt
Instructions
- Preheat the oven to 170°C / 338°F. Line a muffin tin with 12 muffin cases.
- For the topping, put all the ingredients in a bowl and mix well with a fork. Set aside.
- Mash the banana in a large bowl with a fork. Mix the yogurt, milk, eggs, maple syrup, melted butter and grated apple with the banana.
- In a seperate bowl combine the dry ingredients.
- Add the dry ingredients to the liquid ones and stir with a spatula (no longer than necessary). Quickly fold in the blueberries.
- Divide the batter between the prepared muffin cups. Bake for 25-30 minutes (tooth pick test).
- Let cool completely.
