Grapefruit Thyme Mocktail

This refreshing grapefruit thyme mocktail tastes wonderfully light and is a delicious non-alcoholic cocktail. The syrup is easy to make and lasts in the fridge for at least 2 weeks!

Equipment

  • 1 pot
  • 1 glass or bottle to store the syrup

Ingredients

Thyme Syrup

  • 200 g white cane sugar or granulated sugar
  • 250 ml water
  • 20 g fresh thyme sprigs

Finish

  • 800 ml soda water cold (1 cup = 240 ml)
  • 180 ml thyme syrup
  • 320 ml grapefruit juice
  • ice cubes

In Addition

  • 1 medium grapefruit
  • fresh thyme sprigs

Instructions

  • To make the syrup, bring sugar and water to the boil in a saucepan. Turn down the heat to low and simmer for about 5 minutes until the sugar has dissolved. Remove from heat. Add the thyme sprigs and cover with the syrup. Allow to steep at room temperature for 2-3 hours.
  • Remove thyme sprigs. Pour the syrup into a jar with a lid and place in the refrigerator until ready to use.
  • Before serving, pour ice cubes into glasses. Add approx. 30 ml / 2 tbsp of thyme syrup to each glass (varies according to taste) and top up with 80 ml / 1/3 cup of grapefruit juice and approx. 180-200 ml / 3/4 cup of mineral water. Garnish with a slice of grapefruit and a sprig of thyme. Enjoy ice cold.
