Ingredients
Thyme Syrup
200gwhite cane sugaror granulated sugar
250mlwater
20gfresh thyme sprigs
Finish
800mlsoda watercold (1 cup = 240 ml)
180mlthyme syrup
320mlgrapefruit juice
ice cubes

1mediumgrapefruit
fresh thyme sprigs
Instructions
To make the syrup, bring sugar and water to the boil in a saucepan. Turn down the heat to low and simmer for about 5 minutes until the sugar has dissolved. Remove from heat. Add the thyme sprigs and cover with the syrup. Allow to steep at room temperature for 2-3 hours.
Remove thyme sprigs. Pour the syrup into a jar with a lid and place in the refrigerator until ready to use.
Before serving, pour ice cubes into glasses. Add approx. 30 ml / 2 tbsp of thyme syrup to each glass (varies according to taste) and top up with 80 ml / 1/3 cup of grapefruit juice and approx. 180-200 ml / 3/4 cup of mineral water. Garnish with a slice of grapefruit and a sprig of thyme. Enjoy ice cold.
