This moist banana bread with almond butter is made out of these ingredients:
- Bananas. Be sure to use ripe bananas, those whose peel already has brown spots. These bananas are optimally sweet and soft.
- Flour. All-purpose flour or spelt cake flour.
- Butter. For this recipe you'll need melted butter.
- Sugar. I prefer using fine light brown sugar. You can use granulated sugar instead as well.
- Almond Butter. Use creamy almond butter made out of 100% nuts. This one has the best flavor.
- Chocolate. You can use either chocolate drops or chopped chocolate.
- Eggs.
- Cinnamon.
- Baking Powder.
- Pinch of Salt.
How to make a soft Banana Bread with Almond Butter
Preparing this banana bread is very uncomplicated. You need 2 mixing bowls and a rectangular baking pan (approx. 28×10 cm).
Place the bananas in a large bowl and mash them with a fork. Alternatively, you can also mix them in a blender.
Add eggs, almond butter and sugar and stir everything together.
Add the melted butter and mix everything well again.
Place all dry ingredients in a separate bowl and mix well with a whisk.
Add the dry ingredients and 2/3 of the chocolate chips to the liquid ingredients and stir everything together. Mix only as long as necessary so that the banana bread does not become sticky after baking.

Equipment
- 2 mixing bowls
- loaf pan- approx. 28x10cm / 11x4 inches; if it's not "non-stick" or silicone, grease it with a little bit of butter and dust with flour or add parchment paper to it
Ingredients
- 3 medium ripe bananas approx. 350 grams
- 100 g butter melted
- 2 medium Eggs preferably organic
- 60 ml almond butter
- 120 g sugar light brown sugar or granulated sugar
- 150 g chocolate chips semi-sweet; alternatively chopped chocolate
- 260 g cake spelt flour or all-purpose flour
- 2 tsp cinnamon grounded
- 2 tsp vanilla extract optional
- 2 tsp baking powder
- ¼ tsp salt
Instructions
- Preheat the oven to 170°C / 338°F top/bottom heat. Line a loaf pan with baking paper or grease with butter and dust with flour.
- Peel the bananas, place them in a larger bowl and mash them finely with a fork.
- In a separate bowl mix flour, baking powder, cinnamon and salt.
- Add the almond butter, eggs, sugar and vanilla to the bananas and mix well. Then stir in the melted butter. Stir in the dry ingredients and 2/3 of the chocolate chips with a spatula until a homogeneous dough is formed.
- Pour the batter into the loaf pan. Top with the rest of the chocolate chips.
- Bake in the preheated oven for 55-60 Minutes. If it's already very brown after 40 minutes you can top the surface with aluminium foil. To make sure it's fully baked, insert a toothpick. If it comes out clean its done, if there's dough on it, bake for few more minutes.
- Let cool in the loaf pan for 10 minutes. Remove and let cool to room temperature on a cake rack.
